- 1 cup self-rising flour
- 1/2 cup cooked spinach, squeezed dry and chopped
- 1/2 cup cottage cheese
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon salt
- 1 tablespoon olive oil (for brushing)
- Optional toppings: sesame seeds, everything bagel seasoning
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the self-rising flour, chopped spinach, cottage cheese, garlic powder, and salt until a soft dough forms.
- Divide the dough into 2–4 equal portions. Flatten each into a disc about 1/2-inch thick with your hands.
- Use your finger or a small cutter to create a hole in the center, giving them the traditional flagel (flat bagel) shape.
- Brush the tops lightly with olive oil and sprinkle with desired toppings.
- Bake for 20–25 minutes, or until golden brown and cooked through.
- Let cool slightly before serving. Enjoy plain or with a spread like hummus, avocado, or more cottage cheese.
Notes
- Use frozen spinach that’s been thawed and well-drained, or quickly sauté fresh spinach and squeeze out excess moisture.
- Low-fat cottage cheese can be used for a lighter version.
- To make them gluten-free, substitute with a 1:1 gluten-free baking mix that includes leavening agents.
