Description

A quick and savory take on flat bagels, these spinach cottage cheese flagels are packed with protein and flavor—perfect for breakfast, lunch, or a healthy snack.


Ingredients

  • 1 cup self-rising flour
  • 1/2 cup cooked spinach, squeezed dry and chopped
  • 1/2 cup cottage cheese
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil (for brushing)
  • Optional toppings: sesame seeds, everything bagel seasoning

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the self-rising flour, chopped spinach, cottage cheese, garlic powder, and salt until a soft dough forms.
  3. Divide the dough into 2–4 equal portions. Flatten each into a disc about 1/2-inch thick with your hands.
  4. Use your finger or a small cutter to create a hole in the center, giving them the traditional flagel (flat bagel) shape.
  5. Brush the tops lightly with olive oil and sprinkle with desired toppings.
  6. Bake for 20–25 minutes, or until golden brown and cooked through.
  7. Let cool slightly before serving. Enjoy plain or with a spread like hummus, avocado, or more cottage cheese.

Notes

  • Use frozen spinach that’s been thawed and well-drained, or quickly sauté fresh spinach and squeeze out excess moisture.
  • Low-fat cottage cheese can be used for a lighter version.
  • To make them gluten-free, substitute with a 1:1 gluten-free baking mix that includes leavening agents.
