Description

These Easy Spinach Feta Baked Omelets are a quick, healthy, and delicious breakfast option. Packed with nutrient-rich spinach and creamy feta cheese, these omelets are baked to perfection for a light yet satisfying meal. Perfect for busy mornings or meal prepping for the week ahead.

Ingredients

Scale
  • 6 large eggs
  • 1/2 cup milk (or dairy-free milk for a dairy-free version)
  • 1 cup fresh spinach, chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup diced onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil (for greasing the pan)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or a baking dish with olive oil.
  2. In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
  3. Stir in the chopped spinach, crumbled feta cheese, and diced onion.
  4. Pour the egg mixture evenly into the muffin cups or the prepared baking dish.
  5. Bake for 20–25 minutes (15–20 minutes if using a muffin tin), or until the omelets are set and lightly golden on top.
  6. Let the omelets cool slightly before removing them from the muffin tin or slicing the baking dish. Serve warm.

Notes

  • Feel free to add other vegetables such as mushrooms, bell peppers, or tomatoes for extra flavor and nutrition.
  • If you prefer a fluffier omelet, you can add a little baking powder (about 1/2 teaspoon) to the egg mixture.
  • These omelets can be stored in the fridge for up to 3 days or frozen for longer storage. Reheat in the microwave or oven before serving.
