Instructions

  1. Prepare the Strawberries:
    • If using fresh strawberries, chop them finely or blend them into a puree using a blender or food processor. Set aside.
  2. Whip the Cream:
    • In a large mixing bowl, beat the heavy whipping cream with an electric mixer on medium speed until soft peaks form. Add powdered sugar and vanilla extract and continue whipping until stiff peaks form.
  3. Melt the Marshmallows:
    • In a separate saucepan, heat the mini marshmallows over low heat with a splash of water (about 2 tbsp) until they melt and become smooth. Stir constantly to prevent burning. Once melted, remove from the heat and allow it to cool for a few minutes.
  4. Mix the Marshmallow with Strawberries:
    • Add the melted marshmallow mixture into the strawberry puree or chopped strawberries and mix until well combined. If you’re using strawberry gelatin, add it in now to enhance the flavor and color of the mousse.
  5. Combine with Whipped Cream:
    • Gently fold the strawberry-marshmallow mixture into the whipped cream using a spatula. Be careful not to deflate the whipped cream—fold until the mixture is smooth and fully incorporated.
  6. Chill the Mousse:
    • Spoon the mousse into individual serving dishes or one large bowl. Refrigerate for at least 2 hours to let the mousse set and become firm.
  7. Serve:
    • Garnish with fresh strawberries on top before serving for an extra touch of color and flavor.

Notes

  • For a more intense strawberry flavor, you can add extra strawberry puree or even a few drops of strawberry extract.
