Description

These Easy Valentine Sandwich Cookies are the perfect sweet treat for your loved ones! Soft sugar cookies filled with fluffy pink frosting make for an irresistible dessert, ideal for Valentine’s Day celebrations. Decorated with a simple heart shape, these cookies are a fun and easy way to show someone you care.

Ingredients

Scale
  • 1 package (17.5 oz) sugar cookie mix
  • 1/4 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1 large egg
  • 1/4 cup granulated sugar (for rolling)
  • 1 container (12 oz) whipped fluffy white frosting
  • Red food color

Instructions

  • Prepare the Cookie Dough:
Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper. In a large bowl, combine the sugar cookie mix, all-purpose flour, softened butter, and egg. Mix until a soft dough forms.
  • Roll and Cut Cookies:
Lightly flour a clean surface and roll out the dough to about 1/4-inch thickness. Use a heart-shaped cookie cutter to cut out cookies. Re-roll the scraps as needed. Roll each cut-out cookie in granulated sugar, ensuring a light, even coating.
  • Bake the Cookies:
Place the cookies on the prepared baking sheets, spacing them about 2 inches apart. Bake for 7-9 minutes or until the edges are lightly golden. Avoid overbaking to keep them soft. Remove from the oven and allow the cookies to cool completely on a wire rack.
  • Prepare the Frosting:
In a small bowl, mix the whipped fluffy white frosting with a few drops of red food color to achieve your desired pink shade.
  • Assemble the Sandwich Cookies:
Spread about 1 teaspoon of pink frosting onto the bottom (flat side) of one cooled cookie. Top with another cookie, flat side down, pressing gently to create a sandwich.
  • Repeat:
Repeat the process with the remaining cookies and frosting.

Notes

  • You can adjust the amount of food coloring in the frosting to achieve the perfect shade of pink.
  • Store the finished sandwich cookies in an airtight container to maintain freshness.
