- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Strawberry Filling:
- In a small saucepan, combine the chopped strawberries, sugar, cornstarch, water, and lemon juice. Heat over medium heat, stirring occasionally, until the mixture begins to bubble and thicken (about 5-7 minutes).
- Remove from heat and stir in the vanilla extract. Let it cool while you prepare the pastry.
- Prepare the Puff Pastry:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface. Cut the pastry into 4 equal squares or rectangles.
- Brush the edges of each square with melted coconut oil or vegan butter.
- Assemble the Danishes:
- Spoon a generous amount of the strawberry filling into the center of each pastry square.
- Fold the corners of the puff pastry towards the center, creating a little pocket around the filling. You can leave the center open or fold the sides in to create a more enclosed shape.
- Brush the folded pastry with a bit more melted coconut oil or vegan butter for a golden finish.
- Bake the Danishes:
- Place the assembled danishes onto the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the pastry is golden and puffed up.
- Make the Vegan Icing (Optional):
- In a small bowl, whisk together the powdered sugar, non-dairy milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if needed.
- Serve:
- Once the danishes are baked, remove them from the oven and allow them to cool slightly.
- Drizzle the vegan icing over the top of each danish for a sweet finishing touch.
