Instructions

  1. Prepare the Strawberry Filling:
    • In a small saucepan, combine the chopped strawberries, sugar, cornstarch, water, and lemon juice. Heat over medium heat, stirring occasionally, until the mixture begins to bubble and thicken (about 5-7 minutes).
    • Remove from heat and stir in the vanilla extract. Let it cool while you prepare the pastry.
  2. Prepare the Puff Pastry:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • Roll out the puff pastry on a lightly floured surface. Cut the pastry into 4 equal squares or rectangles.
    • Brush the edges of each square with melted coconut oil or vegan butter.
  3. Assemble the Danishes:
    • Spoon a generous amount of the strawberry filling into the center of each pastry square.
    • Fold the corners of the puff pastry towards the center, creating a little pocket around the filling. You can leave the center open or fold the sides in to create a more enclosed shape.
    • Brush the folded pastry with a bit more melted coconut oil or vegan butter for a golden finish.
  4. Bake the Danishes:
    • Place the assembled danishes onto the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the pastry is golden and puffed up.
  5. Make the Vegan Icing (Optional):
    • In a small bowl, whisk together the powdered sugar, non-dairy milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if needed.
  6. Serve:
    • Once the danishes are baked, remove them from the oven and allow them to cool slightly.
