Description

This no-bake Éclair Cake is a creamy, indulgent dessert that tastes just like the classic French éclair but in an easy, no-bake form. Layers of graham crackers, vanilla pudding, and a rich chocolate glaze make for a decadent treat that’s perfect for any occasion.

Ingredients

Scale

For the cake:

  • 1 box (14.4 oz) graham crackers
  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 oz) whipped topping (like Cool Whip)

For the chocolate glaze:

  • 1/4 cup butter
  • 1/4 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. In a medium bowl, whisk together the instant vanilla pudding mix and cold milk until thickened (about 2 minutes).
  2. Fold in the whipped topping until well combined, creating a smooth and creamy filling.
  3. In a 9×13-inch baking dish, layer the graham crackers on the bottom. You may need to break the crackers to fit them into the dish, depending on the size.
  4. Spread half of the pudding mixture over the graham crackers, smoothing it into an even layer.
  5. Add another layer of graham crackers on top of the pudding.
  6. Spread the remaining pudding mixture over the second layer of graham crackers.
  7. Finish with a final layer of graham crackers on top.
  8. In a saucepan, melt the butter over medium heat. Add the milk and cocoa powder, stirring until smooth.
  9. Stir in the powdered sugar and vanilla extract, continuing to stir until the glaze is smooth and thickened.
  10. Pour the chocolate glaze over the top layer of graham crackers, spreading it evenly to cover.
  11. Refrigerate the cake for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
  12. Cut into squares and serve chilled. Enjoy your delicious Éclair Cake!

Notes

  • This cake can be made a day ahead of time, which makes it a great make-ahead dessert for parties or gatherings.
  • If you prefer a more intense chocolate flavor, you can increase the cocoa powder in the glaze.
  • You can also add a layer of fresh fruit, like sliced strawberries or bananas, between the graham crackers and pudding mixture for an extra touch of flavor.
