  • 1 tablespoon butter or oil
  • Salt and pepper, to taste
  • Optional toppings: salsa, guacamole, sour cream, hot sauce, chopped cilantro, or diced avocado

Instructions

  1. Scramble the Eggs:
    In a bowl, whisk the eggs with a pinch of salt and pepper. Heat a non-stick skillet over medium heat and add the butter or oil. Pour in the eggs and scramble them, cooking until they are fully set but still soft. Remove from heat and set aside.
  2. Assemble the Quesadilla:
    Place one tortilla in the same skillet over medium heat. Sprinkle half of the cheese evenly over the tortilla. Add the scrambled eggs on top of the cheese, and then sprinkle the remaining cheese over the eggs. Top with the second tortilla.
  3. Cook the Quesadilla:
    Cook the quesadilla for 2-3 minutes until the bottom tortilla is golden and crispy. Carefully flip the quesadilla using a spatula, and cook for another 2-3 minutes on the other side until it’s golden brown and the cheese is melted.
  4. Serve:
