Description

Elsa’s Chocolate Dipped Macaroons are a delightful treat made with shredded coconut and a hint of vanilla, perfectly baked to a golden crisp. Dipped in rich chocolate, these macaroons are both crunchy and chewy, making them an irresistible indulgence.

  • 1 tsp coconut oil (optional, for smoother chocolate coating)

Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix the Macaroon Ingredients: In a medium bowl, combine the shredded coconut, sugar, salt, egg whites, and vanilla extract. Stir until everything is evenly mixed and the coconut is well-coated.
  3. Form the Macaroons: Use a spoon or your hands to scoop the mixture into small mounds, about 1 1/2 inches in diameter, and place them onto the prepared baking sheet. Gently press the tops to shape them slightly, making sure the macaroons stay intact while baking.
  4. Bake the Macaroons: Bake in the preheated oven for 18–20 minutes, or until the macaroons are golden brown around the edges. Remove from the oven and let them cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
  5. Prepare the Chocolate Dip: While the macaroons cool, melt the chocolate chips and coconut oil (if using) in a heatproof bowl over a double boiler or microwave in 30-second intervals, stirring until smooth and fully melted.
  6. Dip the Macaroons: Once the macaroons are fully cooled, dip the bottom half of each macaroon into the melted chocolate, allowing the excess to drip off. Place the dipped macaroons back onto the parchment-lined baking sheet to set.
  7. Set the Chocolate: Let the chocolate set at room temperature for about 30 minutes, or speed up the process by placing the macaroons in the refrigerator for 10–15 minutes.
