- 1 box white cake mix
- 1 (8oz) can crushed pineapple
- 1 cup sugar
- 1 (8oz) package cream cheese
- 1/2 cup butter, softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 2–3 cups crushed pecans
Instructions
- Prepare the white cake mix according to package instructions, then bake and allow the cake to cool.
- Once cooled, poke holes in the cake using a fork.
- In a saucepan, combine the crushed pineapple with juice and 1 cup of sugar. Boil for a few minutes, then pour the mixture over the cooled cake.
- In a large bowl, blend together cream cheese, butter, and powdered sugar until smooth.
- Add vanilla extract and crushed pecans, and mix well.
- Spread the cream cheese frosting mixture over the cake.
