Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy and smooth.
  4. Add the egg and vanilla extract to the butter mixture and beat until well combined.
  5. In a small bowl, dissolve the espresso powder in the milk, then add it to the wet ingredients and mix until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden and the centers are set. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  9. While the cookies are cooling, make the mascarpone filling: In a small bowl, beat together the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
  10. Once the cookies have cooled, spread a generous amount of mascarpone filling onto the flat side of one cookie, then sandwich with another cookie.
  11. Lightly dust the top of each sandwich with unsweetened cocoa powder for a finishing touch. Serve and enjoy!
