Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy and smooth.
- Add the egg and vanilla extract to the butter mixture and beat until well combined.
- In a small bowl, dissolve the espresso powder in the milk, then add it to the wet ingredients and mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden and the centers are set. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
- While the cookies are cooling, make the mascarpone filling: In a small bowl, beat together the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Once the cookies have cooled, spread a generous amount of mascarpone filling onto the flat side of one cookie, then sandwich with another cookie.
- Lightly dust the top of each sandwich with unsweetened cocoa powder for a finishing touch. Serve and enjoy!

- If you prefer a stronger coffee flavor, you can increase the amount of espresso powder or add a teaspoon of coffee liqueur (such as Kahlúa) to the dough.
