Description

This European Apple Cake is a simple yet delicious dessert, combining the sweetness of apples with a light, fluffy cake base. Infused with cinnamon and a touch of vanilla, it’s a perfect treat for any season. Ideal for gatherings, it’s best enjoyed warm with a dusting of powdered sugar or a scoop of vanilla ice cream!

Ingredients

Scale
  • 4 medium apples (preferably Granny Smith or Gala)
  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 3 large eggs
  • ½ cup unsalted butter (melted)
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • Powdered sugar (for dusting, optional)

Instructions

  1. Prepare the Apples:
    • Peel, core, and slice the apples into thin wedges. Set aside.
  2. Make the Batter:
    • Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
    • In a large mixing bowl, whisk together the flour, sugar, cinnamon, baking powder, and salt.
    • In a separate bowl, beat the eggs and add the vanilla extract and melted butter.
    • Gradually combine the wet ingredients with the dry ingredients, alternating with the milk. Stir until just combined to form a smooth batter.
  3. Assemble the Cake:
    • Pour half of the batter into the prepared cake pan, spreading it evenly.
    • Arrange half of the apple slices on top of the batter.
    • Pour the remaining batter over the apples and then top with the remaining apple slices.
  4. Bake the Cake:
    • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
    • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  5. Serve and Enjoy!
    • Dust the cooled cake with powdered sugar before serving. Optionally, serve with a scoop of vanilla ice cream or whipped cream.

Notes

  • For a more decadent twist, you can add a handful of chopped nuts like walnuts or pecans into the batter.
  • The cake can also be made with a mix of apples and pears for a slightly different flavor.
  • If the cake begins to brown too much, you can cover it with aluminum foil for the last 10 minutes of baking.
