For the Whoopie Pies:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 cup apple cider
  • 1 teaspoon vanilla extract

For the Filling:

  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons apple cider

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  • In a large bowl, cream together granulated sugar, brown sugar, and softened butter until light and fluffy.
  • Beat in the egg, apple cider, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • For the filling, beat together softened butter, powdered sugar, vanilla extract, and apple cider until smooth and creamy.
  • Once the whoopie pies have cooled, spread a generous amount of filling on the flat side of one pie and sandwich with another pie.

Notes

  • For an extra touch, you can sprinkle some cinnamon on the filling before closing the whoopie pies.
