For the Whoopie Pies:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 cup apple cider
- 1 teaspoon vanilla extract
For the Filling:
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons apple cider
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, cream together granulated sugar, brown sugar, and softened butter until light and fluffy.
- Beat in the egg, apple cider, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- For the filling, beat together softened butter, powdered sugar, vanilla extract, and apple cider until smooth and creamy.
- Once the whoopie pies have cooled, spread a generous amount of filling on the flat side of one pie and sandwich with another pie.
Notes
- For an extra touch, you can sprinkle some cinnamon on the filling before closing the whoopie pies.
- These pies taste even better the next day as the flavors meld together!
