Ingredients

Scale

For the Cake:

  • 1 box (15.25 oz) white cake mix
  • 3 large eggs
  • 1 cup water
  • ½ cup vegetable oil

For the Poke Cake Filling:

  • 1 box (3 oz) strawberry or raspberry gelatin
  • 1 cup boiling water
  • ½ cup cold water

For the Topping:

  • 1 tub (8 oz) whipped topping (such as Cool Whip)
  • ½ cup pastel-colored sprinkles (optional)
  • ½ cup mini Easter candy (e.g., pastel M&Ms, jelly beans) (optional)

Instructions

  1. Make the Cake:

    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
    • Prepare the white cake mix according to the package instructions, using the eggs, water, and vegetable oil.
    • Pour the batter into the prepared pan and bake according to the instructions, usually around 30 minutes, until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool for 10 minutes in the pan.
  2. Prepare the Poke Cake Filling:

    • While the cake is cooling, dissolve the strawberry or raspberry gelatin in 1 cup of boiling water. Stir until the gelatin is fully dissolved.
    • Add ½ cup of cold water to the gelatin mixture and stir again.
  3. Make the Poke Cake:

    • Once the cake has cooled for 10 minutes, use the handle of a wooden spoon or a fork to poke holes all over the surface of the cake.
    • Slowly pour the prepared gelatin mixture over the cake, ensuring it gets into all of the holes.
    • Allow the cake to cool completely at room temperature, then refrigerate for at least 2 hours to allow the gelatin to set.
  4. Prepare the Topping:

    • Once the cake has set, spread the whipped topping evenly over the top of the cake.
    • Decorate with pastel-colored sprinkles and mini Easter candy (optional) for a festive touch.
  5. Serve:

    • Slice and serve chilled. Enjoy your colorful and delicious Festive Easter Poke Cake!
