  • 1 cup crumbled feta cheese
  • 1/4 cup grated Parmesan (optional)
  • 1/4 cup chopped fresh parsley or spinach (optional)
  • Cooking spray or butter for greasing the dish

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
  2. In a skillet over medium heat, heat olive oil and sauté onion until translucent, about 3 minutes.
  3. Add mushrooms and cook until softened and moisture has evaporated, about 5–7 minutes. Stir in garlic and cook for 1 more minute. Set aside to cool slightly.
  4. In a mixing bowl, whisk together eggs, milk, salt, pepper, and oregano until well combined.
  5. Stir in the sautéed mushroom mixture, crumbled feta, Parmesan (if using), and parsley or spinach.
  6. Pour the mixture into the prepared baking dish and smooth the top.
  7. Bake for 30–35 minutes or until the center is set and the top is lightly golden.
  8. Let cool for 5–10 minutes before slicing into squares. Serve warm or at room temperature.
