  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded

  • 1 cup gouda cheese, shredded
  • 1/2 cup fontina cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1/2 cup panko breadcrumbs (optional, for topping)
  • 2 tablespoons butter, melted (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Cook macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large saucepan, melt 4 tablespoons of butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux.
  4. Gradually whisk in milk and heavy cream, stirring constantly until the mixture thickens, about 5 minutes.
  5. Lower heat and stir in all five cheeses, reserving 1/2 cup of the cheddar for topping. Stir until smooth.
  6. Season with salt, pepper, and paprika (if using).
  7. Add cooked macaroni to the cheese sauce and stir to combine.
  8. Pour the mixture into the prepared baking dish and spread evenly. Top with reserved cheddar.
  9. If using breadcrumbs, combine melted butter with panko and sprinkle over the top.
  10. Bake for 20–25 minutes or until bubbly and golden brown on top.
  11. Let rest 5–10 minutes before serving.
