Description

For the Cod:

  • 4 cod fillets (6 oz each)
  • 1/4 cup soy sauce (preferably light soy sauce)
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, grated
  • 2 garlic cloves, minced
  • 1 tablespoon sesame oil

For Garnish:

  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds
  • Fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  • Prepare the Marinade: In a small bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil until well combined.
  • Marinate the Cod: Place the cod fillets in a shallow dish and pour the marinade over them. Cover with plastic wrap and refrigerate for at least 30 minutes (up to 1 hour).
  • Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Bake the Cod: Remove the cod from the marinade and place it on the prepared baking sheet. Brush with any leftover marinade. Bake for 12-15 minutes, or until the cod flakes easily with a fork.
  • Glaze and Garnish: While the cod bakes, heat the remaining marinade in a small saucepan until it thickens (about 3-5 minutes). Brush the thickened glaze over the cod after baking and garnish with green onions, sesame seeds, and cilantro.
  • Serve: Serve immediately with lime wedges on the side for added flavor.

  • Pan-searing the cod in a non-stick skillet for a crispy exterior is also an option.
