Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 tablespoon olive oil

- 2 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon Old Bay seasoning

- 1 pre-made pie crust (or homemade)

In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook for 2-3 minutes per side until pink and fully cooked. Remove from the skillet and set aside. -

In the same skillet, add the chopped onion, garlic, and bell pepper (if using). Sauté for 3-4 minutes until softened. -
Make the Filling:
In a medium bowl, whisk together the heavy cream, eggs, mayonnaise, lemon juice, Old Bay seasoning, smoked paprika, salt, and pepper. Once the shrimp has cooled, chop them into bite-sized pieces and add them to the mixture along with the sautéed vegetables. Stir to combine. -
Assemble the Pie:
Preheat the oven to 375°F (190°C). Roll out the pie crust and fit it into a 9-inch pie dish. Pour the shrimp filling into the prepared crust and spread it evenly. If desired, sprinkle shredded cheddar cheese on top for extra flavor. -
Bake:
Bake for 30-35 minutes or until the filling is set, the edges of the crust are golden, and the top is lightly browned. -
Garnish and Serve:
