Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. Prepare the pistachios: In a food processor, grind the pistachios into a fine powder (similar to almond meal). Add the sugar, baking powder, and salt to the ground pistachios and pulse a few more times to combine.
  3. Mix the cake batter: In a large bowl, whisk the eggs, melted butter, and vanilla extract until smooth. Add the pistachio mixture to the wet ingredients and stir until fully combined.
  4. Bake the cake: Pour the batter into the prepared cake pan and spread it out evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
