Ingredients

  • 1 teaspoon baking powder
  • ¾ cup salted butter, softened
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ teaspoon almond extract (optional)
  • 2 large eggs (room temperature)

Optional Icing:

  • 3 cups powdered sugar, sifted
  • 2 tablespoons light corn syrup
  • 34 tablespoons milk
  • ½ teaspoon vanilla extract
  • Gel food coloring (optional)

Instructions

  • Whisk together the flour, baking powder, and salt in a large bowl. Set aside.
  • In another bowl, cream the butter and sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time. Add the vanilla and almond extracts, mixing until fully incorporated.
  • Gradually add the flour mixture to the butter mixture, mixing on low speed until a soft dough forms.
  • Divide the dough into two equal portions. Roll each portion on a lightly floured surface to about ¼-inch thickness. Lightly dust with flour if sticky. Cover and refrigerate for at least 1-2 hours.
  • Preheat the oven to 375°F (190°C). Line 2-3 baking sheets with parchment paper.
  • Remove dough from the fridge, cut into desired shapes using cookie cutters, and arrange on baking sheets. Re-roll scraps and chill cut-out dough for 10 minutes before baking.
  • Bake cookies for 8-10 minutes, or until lightly browned. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Optional Icing: Mix powdered sugar, milk, corn syrup, and vanilla. Adjust consistency with more milk or powdered sugar as needed. Add food coloring if desired and decorate cooled cookies.
