Light and airy brioche donuts filled with a rich and creamy chocolate center—perfect for a decadent breakfast or dessert treat.

- 2 1/4 tsp active dry yeast (1 packet)
- 1/4 cup warm milk (about 110°F)
- 3 1/2 cups all-purpose flour
- 1/4 cup sugar
- 1 tsp salt
- 4 large eggs
- 1/2 cup unsalted butter, softened
- Vegetable oil, for frying
- Chocolate filling:
- 1 cup heavy cream
- 8 oz semi-sweet chocolate, chopped
- 1 tbsp unsalted butter
- Powdered sugar, for dusting
Instructions
- In a small bowl, dissolve yeast in warm milk. Let sit for 5–10 minutes until foamy.
- In a large bowl, combine flour, sugar, and salt.
- Add eggs and yeast mixture to the dry ingredients; mix until dough starts to form.
- Add softened butter and knead the dough until smooth and elastic, about 8–10 minutes by hand or 5 minutes with a mixer.
- Place dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1–2 hours.
- Turn dough onto a floured surface, roll to about 1/2-inch thickness, and cut out donut shapes using a donut cutter or two round cutters.
- Place donuts on a baking sheet, cover, and let rise for 30–45 minutes.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Fry donuts in batches until golden brown, about 1–2 minutes per side. Drain on paper towels.
- Meanwhile, prepare chocolate filling: heat heavy cream until just simmering, pour over chopped chocolate and butter. Let sit 2 minutes, then stir until smooth and glossy. Cool slightly.
- Fill a piping bag with chocolate filling and inject into each cooled donut.
- Dust donuts with powdered sugar before serving.
Notes
- For a lighter filling, fold whipped cream into the chocolate ganache before filling.
- Store filled donuts in the refrigerator for up to 2 days.
- Reheat slightly before serving for a gooey center.
