Description

Light and airy brioche donuts filled with a rich and creamy chocolate center—perfect for a decadent breakfast or dessert treat.


Ingredients

  • 2 1/4 tsp active dry yeast (1 packet)
  • 1/4 cup warm milk (about 110°F)
  • 3 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tsp salt
  • 4 large eggs
  • 1/2 cup unsalted butter, softened
  • Vegetable oil, for frying
  • Chocolate filling:
    • 1 cup heavy cream
    • 8 oz semi-sweet chocolate, chopped
    • 1 tbsp unsalted butter
  • Powdered sugar, for dusting

Instructions

  1. In a small bowl, dissolve yeast in warm milk. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, combine flour, sugar, and salt.
  3. Add eggs and yeast mixture to the dry ingredients; mix until dough starts to form.
  4. Add softened butter and knead the dough until smooth and elastic, about 8–10 minutes by hand or 5 minutes with a mixer.
  5. Place dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1–2 hours.
  6. Turn dough onto a floured surface, roll to about 1/2-inch thickness, and cut out donut shapes using a donut cutter or two round cutters.
  7. Place donuts on a baking sheet, cover, and let rise for 30–45 minutes.
  8. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  9. Fry donuts in batches until golden brown, about 1–2 minutes per side. Drain on paper towels.
  10. Meanwhile, prepare chocolate filling: heat heavy cream until just simmering, pour over chopped chocolate and butter. Let sit 2 minutes, then stir until smooth and glossy. Cool slightly.
  11. Fill a piping bag with chocolate filling and inject into each cooled donut.
  12. Dust donuts with powdered sugar before serving.

Notes

  • For a lighter filling, fold whipped cream into the chocolate ganache before filling.
  • Store filled donuts in the refrigerator for up to 2 days.
  • Reheat slightly before serving for a gooey center.
