  • 3 large eggs, separated

  • 1/4 cup almond flour (or coconut flour)

  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder (optional for fluffiness)

Instructions

  1. Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Separate the eggs: Separate the egg whites and egg yolks into two different bowls. Be careful not to get any yolk in the egg whites.
  3. Beat the egg whites: Add the cream of tartar to the egg whites. Using a hand mixer or stand mixer, beat the egg whites until stiff peaks form. This will give the bread its light, airy texture.
  4. Prepare the egg yolk mixture: In another bowl, whisk the egg yolks, cottage cheese, almond flour, garlic powder (if using), salt, and baking powder (if using). Mix until everything is fully incorporated and smooth.
  5. Combine the mixtures: Gently fold the beaten egg whites into the egg yolk mixture. Be careful not to deflate the egg whites—fold until just combined.
  6. Scoop and shape: Using a spoon or ice cream scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Flatten each mound slightly with the back of the spoon to form rounds about 2-3 inches in diameter.
  7. Bake: Bake in the preheated oven for 25-30 minutes, or until the cloud bread is golden brown on top and firm to the touch.
  8. Cool: Allow the cloud bread to cool slightly on a wire rack before serving. It can be enjoyed warm or at room temperature.
