- 3 large eggs, separated

- 1/4 cup almond flour (or coconut flour)

- 1/4 teaspoon salt
- 1/4 teaspoon baking powder (optional for fluffiness)
Instructions
- Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Separate the eggs: Separate the egg whites and egg yolks into two different bowls. Be careful not to get any yolk in the egg whites.
- Beat the egg whites: Add the cream of tartar to the egg whites. Using a hand mixer or stand mixer, beat the egg whites until stiff peaks form. This will give the bread its light, airy texture.
- Prepare the egg yolk mixture: In another bowl, whisk the egg yolks, cottage cheese, almond flour, garlic powder (if using), salt, and baking powder (if using). Mix until everything is fully incorporated and smooth.
- Combine the mixtures: Gently fold the beaten egg whites into the egg yolk mixture. Be careful not to deflate the egg whites—fold until just combined.
- Scoop and shape: Using a spoon or ice cream scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Flatten each mound slightly with the back of the spoon to form rounds about 2-3 inches in diameter.
- Bake: Bake in the preheated oven for 25-30 minutes, or until the cloud bread is golden brown on top and firm to the touch.
- Cool: Allow the cloud bread to cool slightly on a wire rack before serving. It can be enjoyed warm or at room temperature.
Notes
- You can use either full-fat or reduced-fat cottage cheese. For an even fluffier texture, opt for full-fat cottage cheese.
- These can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for longer storage.
