Description

These Freezer-Friendly Beef Burritos are the ultimate make-ahead meal. Packed with seasoned beef, rice, beans, cheese, and a delicious homemade salsa, they’re perfect for meal prep, busy nights, or a quick lunch on the go. Simply make a batch, freeze, and heat up whenever you need a satisfying and hearty meal!

  • 1 lb Ground beef
  • 1 small Onion, diced
  • 2 cloves Garlic, minced
  • 1 packet Taco seasoning (or homemade seasoning)
  • 1/2 cup Beef broth or water
  • 1 cup Cooked rice
  • 1 can (15 oz) Black beans, drained and rinsed
  • 1/2 cup Frozen corn kernels
  • 1 cup Cheddar cheese, shredded
  • 1/2 cup Sour cream
  • 1 cup Salsa (store-bought or homemade)
  • 8 large Flour tortillas
  • Salt and pepper, to taste
  • Cooking spray (for wrapping)

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Add the diced onion and garlic to the skillet, and cook for 2-3 minutes, until softened.
  3. Stir in the taco seasoning and beef broth (or water). Let it simmer for 5-7 minutes, until the liquid has mostly evaporated and the beef mixture is well-seasoned. Season with salt and pepper to taste.
  4. In a separate bowl, combine the cooked rice, black beans, frozen corn, and shredded cheese. Mix well to combine.
  5. Lay the flour tortillas flat on a clean surface. Spread a layer of the beef mixture down the center of each tortilla, followed by a spoonful of the rice and bean mixture. Add a dollop of sour cream and salsa on top of the filling.
  6. Fold in the sides of the tortilla and then roll it tightly to form a burrito. Repeat with the remaining tortillas and filling.
  7. To freeze: Place the wrapped burritos on a baking sheet and freeze them for 1-2 hours to firm up. Once frozen, wrap each burrito individually in foil or plastic wrap and store them in a large freezer bag for up to 3 months.
  8. To heat: Remove the burrito from the freezer and unwrap the foil. Wrap the burrito in a damp paper towel and microwave on high for 2-3 minutes, or until heated through. Alternatively, bake in the oven at 350°F (175°C) for 15-20 minutes, until hot and crispy.

Notes

  • You can swap ground beef for ground turkey, chicken, or a plant-based protein for a different flavor or dietary preference.
  • Add any of your favorite toppings after reheating, such as guacamole, extra salsa, or lettuce.
  • If you prefer softer tortillas, you can lightly warm them in a dry skillet for a few seconds before filling.
