Savor the rich and aromatic flavors of traditional French cuisine with this classic meat stuffing recipe. Whether you’re filling a turkey, chicken, or vegetables, this “farce à la viande” provides a hearty and delicious complement to any dish, with a mix of herbs and ground meat that’s quintessentially French.

Ingredients

Scale

lb ground pork

1/2 lb ground beef

1/2 lb ground veal (optional)

1 medium onion, finely chopped

2 cloves garlic, minced

2/3 cup breadcrumbs

2 eggs

1/4 cup fresh parsley, chopped

2 tbsp fresh thyme, minced

2 tbsp cognac or brandy (optional)

Salt and pepper to taste

Instructions

  • In a large mixing bowl, combine the ground pork, beef, and veal.
  • Add the chopped onion, minced garlic, breadcrumbs, and eggs to the meat. Mix well.
  • Stir in the chopped parsley, thyme, and cognac. Season with salt and pepper.
  • Mix until all ingredients are well incorporated.
  • Use the stuffing to fill your chosen meat or vegetables.
  • If baking separately, place in a greased baking dish, cover with foil, and bake at 350°F (175°C) for about 45 minutes to 1 hour, or until the internal temperature reaches 160°F (71°C).

Notes

The addition of other herbs like sage or marjoram can add depth to the flavor.
