  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • Salt and pepper, to taste
  • 1 sheet puff pastry (store-bought or homemade)
  • 1 egg (for egg wash)
  • 1 teaspoon Dijon mustard (optional, for extra flavor)

Instructions

  1. Caramelize the onions:
    • Heat the olive oil and butter in a large skillet over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for about 15-20 minutes, until the onions are soft and golden brown.
    • Stir in the balsamic vinegar and brown sugar. Cook for an additional 5 minutes, until the onions are caramelized and sticky. Add fresh thyme, salt, and pepper to taste. Remove from heat and set aside to cool.
  2. Prepare the sausage filling:
    • In a separate bowl, mix the ground sausage with a pinch of salt and pepper. You can also mix in a teaspoon of Dijon mustard for a bit more tangy flavor if desired.
  3. Assemble the rolls:
    • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • Roll out the puff pastry on a lightly floured surface. Cut the sheet into 4 equal rectangles.
    • Place a portion of the sausage mixture down the center of each rectangle, then top with a spoonful of the caramelized onion mixture.
    • Carefully roll up each pastry, sealing the edges and making sure the filling is enclosed. Cut each roll into smaller portions (about 3-4 rolls per rectangle).
  4. Bake the sausage rolls:
    • Beat the egg and brush it over the top of the rolls to give them a golden, glossy finish.
    • Place the rolls on the prepared baking sheet and bake for 20-25 minutes, or until the puff pastry is golden and crisp.
  5. Serve:
    • Allow the sausage rolls to cool for a few minutes before serving. Serve warm with a dipping sauce, such as mustard, ketchup, or a creamy ranch dip.

Notes

  • You can substitute the sausage for a vegetarian or plant-based sausage for a meatless option.
  • If you like extra cheese, you can sprinkle some shredded Gruyère or cheddar on top of the sausage mixture before rolling.
