Description

This Fresh & Tangy Marinated Cucumber, Onion, and Tomato Salad is a refreshing and flavorful side dish that’s perfect for summer gatherings or as a light, healthy snack. With a tangy vinaigrette and crunchy vegetables, it’s simple to make and packed with fresh taste!

Ingredients

Scale
  • 1 large cucumber, thinly sliced
  • 1 medium red onion, thinly sliced
  • 2 medium tomatoes, chopped
  • 1/4 cup apple cider vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey or sugar (optional for sweetness)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dried oregano or Italian seasoning
  • 1 tbsp fresh parsley or basil, chopped (optional, for garnish)

Instructions

    1. Prepare the Vegetables – Slice the cucumber and onion thinly, and chop the tomatoes.
    2. Make the Dressing – In a small bowl, whisk together the apple cider vinegar, olive oil, honey (or sugar), salt, pepper, and oregano (or Italian seasoning) until well combined.
    3. Combine the Salad – In a large bowl, combine the sliced cucumber, onion, and chopped tomatoes.
    4. Marinate – Pour the dressing over the vegetables and toss everything together gently.
    5. Chill – Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
    6. Serve – Garnish with fresh parsley or basil, if desired. Serve chilled and enjoy!

Notes

  • If you prefer a less tangy salad, reduce the amount of vinegar or add a little more honey.
  • You can also add some feta cheese or olives for extra flavor.
  • For a spicier kick, add a pinch of red pepper flakes to the dressing.
  • This salad can be made ahead and stored in the fridge for up to 2 days.
