Instructions
- In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
- Lay a tortilla flat on a clean surface. Spread a generous tablespoon of the cheesecake filling evenly over the center of the tortilla.
- Roll up the tortilla tightly, folding in the edges slightly as you go to secure the filling inside. Repeat this process with all the tortillas and filling.
- In a small bowl, combine the granulated sugar and cinnamon. Set aside.
- Heat about 2-3 inches of vegetable oil in a large skillet or deep fryer over medium heat. Once the oil reaches 350°F (175°C), carefully add the cheesecake roll-ups, one at a time, being careful not to overcrowd the pan.
- Fry the roll-ups for 2-3 minutes on each side, or until golden brown and crispy. Use tongs or a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
- While still warm, roll the fried cheesecake roll-ups in the cinnamon-sugar mixture to coat them evenly.
- Serve the roll-ups immediately, drizzled with whipped cream, chocolate syrup, or your favorite topping for extra indulgence.
