Description

Fried Dace with Stir-fried Greens is a classic Cantonese-inspired dish that pairs flavorful canned fried dace with crisp-tender leafy greens. It’s a savory, umami-rich meal that comes together quickly and is perfect with a bowl of steamed rice.

Ingredients

Scale
  • 1 can fried dace with salted black beans (about 184g)
  • 2 cups Chinese greens (e.g., choy sum, gai lan, or spinach), washed and chopped
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon soy sauce
  • 1/2 teaspoon oyster sauce (optional)
  • 1/2 teaspoon sugar
  • 2 tablespoons water
  • Salt and white pepper to taste

Instructions

  1. Open the can of fried dace and gently remove the fish pieces. Reserve some of the black bean sauce.
  2. Heat vegetable oil in a wok or skillet over medium heat. Add the minced garlic and stir-fry for 30 seconds until fragrant.
  3. Add the chopped greens and stir-fry for 1-2 minutes until they begin to wilt.
  4. Add the soy sauce, oyster sauce (if using), sugar, and water. Stir to combine and cook for another 2-3 minutes until the greens are tender but still bright.
  5. Gently place the fried dace pieces into the wok along with a spoonful of the reserved black bean sauce. Carefully fold the fish into the greens and let everything heat through for 1-2 minutes.
  6. Season with salt and white pepper to taste. Serve hot with steamed rice.

Notes

  • Fried dace with black beans is a pantry staple in many Chinese households and adds a deep umami flavor to vegetable dishes.
  • Be careful when stirring in the dace—it is delicate and can break apart easily.
  • You can use bok choy, mustard greens, or even kale as a substitute if Chinese greens are unavailable.
  • Leftovers can be stored in an airtight container and reheated gently the next day.
