These Frozen S’mores Cheesecake Bars are a delightful combination of graham cracker crust, creamy cheesecake filling, and gooey marshmallow topping, all frozen for a cool and indulgent treat. Perfect for summer!

For the crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the cheesecake filling:
- 16 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 ½ cups heavy whipping cream
For the s’mores topping:
- 1 ½ cups mini marshmallows
- 1 cup mini chocolate chips
- ¼ cup crushed graham crackers (optional, for garnish)
Instructions
- Prepare the crust: In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a greased 9×9-inch baking pan to form an even crust. Chill the crust in the refrigerator while preparing the filling.
- Prepare the cheesecake filling: In a large bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Spread the cheesecake filling over the chilled crust, smoothing the top with a spatula.
- Add the topping: Sprinkle the mini marshmallows and mini chocolate chips evenly over the cheesecake filling.
- Place the pan in the freezer and freeze for at least 4 hours or until the cheesecake bars are firm.
- Before serving, garnish with crushed graham crackers if desired.
- Cut into squares, and serve immediately!
Notes
- If you prefer a toasted marshmallow flavor, lightly toast the marshmallows using a kitchen torch before adding them to the top.
- Store the bars in an airtight container in the freezer for up to a week.
