Description

These Frozen S’mores Cheesecake Bars are a delightful combination of graham cracker crust, creamy cheesecake filling, and gooey marshmallow topping, all frozen for a cool and indulgent treat. Perfect for summer!

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the cheesecake filling:

  • 16 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups heavy whipping cream

For the s’mores topping:

  • 1 ½ cups mini marshmallows
  • 1 cup mini chocolate chips
  • ¼ cup crushed graham crackers (optional, for garnish)

Instructions

  1. Prepare the crust: In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a greased 9×9-inch baking pan to form an even crust. Chill the crust in the refrigerator while preparing the filling.
  2. Prepare the cheesecake filling: In a large bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until well combined.
  5. Spread the cheesecake filling over the chilled crust, smoothing the top with a spatula.
  6. Add the topping: Sprinkle the mini marshmallows and mini chocolate chips evenly over the cheesecake filling.
  7. Place the pan in the freezer and freeze for at least 4 hours or until the cheesecake bars are firm.
  8. Before serving, garnish with crushed graham crackers if desired.
  9. Cut into squares, and serve immediately!

  • If you prefer a toasted marshmallow flavor, lightly toast the marshmallows using a kitchen torch before adding them to the top.
