This moist cake is made with a can of fruit cocktail, creating a sweet, fruity base that’s topped with a sugary, buttery crumble. It’s an irresistibly delicious and comforting treat that’s perfect for potlucks, family gatherings, or just as an everyday dessert.
Ingredients
Scale
For the Cake:
- 1 can (15 oz) fruit cocktail, undrained
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup unsalted butter, melted
- 1 large egg
For the Topping:
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/2 cup chopped nuts (optional, like walnuts or pecans)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or an 8×8-inch square pan.
- Prepare the cake batter: In a large mixing bowl, combine the flour, sugar, baking soda, and salt. Stir to combine.
- Add wet ingredients: Add the undrained fruit cocktail, melted butter, vanilla extract, and the egg to the dry ingredients. Stir until everything is well combined. The batter will be thick and somewhat chunky due to the fruit cocktail.
- Pour into the pan: Pour the batter into the prepared baking pan and spread it out evenly.
- Make the topping: In a small bowl, mix together the sugar, melted butter, and chopped nuts (if using). Sprinkle the topping evenly over the cake batter.
- Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean and the top is golden brown.
- Serve: Let the cake cool slightly before serving. It’s delicious warm, but can also be served at room temperature. Optionally, serve with a scoop of vanilla ice cream or whipped cream on top.
Notes
- If you want to add extra flavor, try mixing in some cinnamon or nutmeg into the batter.
- For a lighter cake, you can substitute the butter with vegetable oil or applesauce.
- This cake is best served fresh, but leftovers can be stored in an airtight container at room temperature for up to 2 days.
- You can swap the fruit cocktail with other canned fruits like peaches or pineapple for a different twist.
