Ingredients
Scale
- 1 package (16.5 oz) refrigerated sugar cookie dough
- 1 1/2 cups Fruity Pebbles cereal (divided)
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Press the sugar cookie dough into the bottom of the pan to form an even crust. Sprinkle 1/2 cup Fruity Pebbles on top and gently press in. Bake for 10 minutes.
- While the crust bakes, beat cream cheese, sugar, egg, vanilla, and salt until smooth and creamy.
- Remove crust from oven. Pour the cheesecake mixture evenly over the partially baked crust and smooth the top.
- Sprinkle remaining 1 cup Fruity Pebbles over the top of the cheesecake layer.
- Return to oven and bake for 20–25 minutes, or until the center is set and edges are lightly golden.
- Cool completely, then chill in the fridge for at least 2 hours before slicing into bars.
Notes
- Use homemade sugar cookie dough if preferred.
- Swap Fruity Pebbles for Cocoa Pebbles or your favorite cereal.
- For cleaner slices, chill overnight and wipe knife clean between cuts.
- Store in the fridge in an airtight container for up to 5 days.
