Description

Fruity Pebbles Cookie Cheesecake Bars are a colorful, chewy, and creamy dessert mashup! A soft sugar cookie base is layered with velvety cheesecake filling and topped with vibrant Fruity Pebbles cereal for a fun, eye-catching treat that’s perfect for parties or a sweet tooth fix.


Ingredients

  • 1 package (16.5 oz) refrigerated sugar cookie dough
  • 1 1/2 cups Fruity Pebbles cereal (divided)
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Press the sugar cookie dough into the bottom of the pan to form an even crust. Sprinkle 1/2 cup Fruity Pebbles on top and gently press in. Bake for 10 minutes.
  3. While the crust bakes, beat cream cheese, sugar, egg, vanilla, and salt until smooth and creamy.
  4. Remove crust from oven. Pour the cheesecake mixture evenly over the partially baked crust and smooth the top.
  5. Sprinkle remaining 1 cup Fruity Pebbles over the top of the cheesecake layer.
  6. Return to oven and bake for 20–25 minutes, or until the center is set and edges are lightly golden.
  7. Cool completely, then chill in the fridge for at least 2 hours before slicing into bars.

Notes

  • Use homemade sugar cookie dough if preferred.
  • Swap Fruity Pebbles for Cocoa Pebbles or your favorite cereal.
  • For cleaner slices, chill overnight and wipe knife clean between cuts.
  • Store in the fridge in an airtight container for up to 5 days.
