Description

Ingredients

  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (25g) cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 7 oz (200g) dark chocolate (60-70%), coarsely chopped
  • 1/4 cup (56g) unsalted butter
  • 2 large eggs, at room temperature
  • 3/4 cup (150g) light brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F) or Gas Mark 4. Line two large baking trays with parchment paper or a silicone baking mat, and set aside.
  2. In a small bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a microwave-safe bowl, combine the chopped chocolate and butter. Microwave in 30-second intervals, stirring between each, until fully melted and smooth. Set aside to cool.
  4. Using a hand mixer or stand mixer fitted with the whisk attachment, beat the eggs and sugar together until pale, fluffy, and tripled in volume (about 5 minutes).
  5. Add the melted chocolate mixture and vanilla extract to the egg mixture, and whisk until fully incorporated.
  6. Gently fold in the dry ingredients, mixing until the batter is smooth. It will be very runny.
  7. Refrigerate the batter for 15 minutes, allowing it to thicken slightly until it resembles a thick brownie batter.
  8. Using a medium cookie scoop, evenly portion the batter onto the prepared baking trays.
  9. Bake for 10-12 minutes (baking one tray at a time) or until the tops are shiny, cracked, and the cookies have domed slightly.
  10. Let the cookies cool on the trays for 15-20 minutes before transferring them to a wire rack to cool completely. The cookies will be very soft at first but will firm up as they cool.

Notes

  • If you prefer slightly firmer cookies, you can refrigerate the dough for up to 30 minutes.
  • For a more intense chocolate flavor, use a darker chocolate (80% cocoa or higher).
