Description

Fudgy Espresso Brownie Bites are decadent, rich, and chocolatey treats with a hint of espresso that intensifies the flavor. These bite-sized brownies are the perfect combination of a smooth, fudgy center and a slightly crisp top, making them a coffee lover’s dream dessert.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant espresso powder
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly with cooking spray.
  2. In a large bowl, whisk together the melted butter and sugar until smooth and well combined.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and espresso powder until fully incorporated.
  4. Sift in the cocoa powder, flour, salt, and baking powder. Mix until just combined.
  5. Fold in the chocolate chips (if using), ensuring they are evenly distributed throughout the batter.
  6. Using a spoon or small cookie scoop, divide the brownie batter evenly among the muffin cups, filling each about 3/4 of the way full.
  7. Bake for 12-15 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).
  8. Allow the brownie bites to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Serve and enjoy! These can be stored in an airtight container for up to 3 days.

Notes

  • If you prefer a stronger coffee flavor, you can increase the espresso powder by an extra teaspoon.
  • For extra indulgence, top with a dusting of powdered sugar or drizzle with melted chocolate before serving.
  • If you don’t have a mini muffin tin, you can bake these in a regular muffin tin, but adjust the baking time accordingly (usually around 18-20 minutes).
