Description

This comforting casserole, also known as Party Potatoes, is a holiday favorite. Creamy, cheesy potatoes are topped with buttery, crunchy corn flakes for a side dish that’s sure to be a crowd-pleaser.

Ingredients

Scale

For the Casserole:

  • 2 pounds southern-style hash brown potatoes (frozen)
  • 2 tablespoons minced onions (frozen)
  • 2 cups sour cream
  • 1 (10.5-ounce) can cream of chicken soup
  • 4 tablespoons butter (melted)
  • 1 teaspoon salt
  • 2 cups shredded cheddar cheese

For the Topping:

  • 2½ cups corn flake cereal (crushed)
  • ½ cup butter (melted)

Instructions

  • Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish with nonstick cooking spray to ensure it doesn’t stick.
  • Prepare the Casserole Mixture:
In a large mixing bowl, combine the frozen hash browns and frozen minced onions. You don’t need to thaw the potatoes.
Add the sour cream, cream of chicken soup, melted butter, salt, and shredded cheddar cheese. Mix everything until well combined.
  • Assemble the Casserole:
Spread the mixture evenly into the prepared casserole dish. Use a spatula to smooth the top and ensure the casserole is evenly distributed.
  • Make the Topping:
In a small bowl, combine the crushed corn flakes and melted butter. Stir until the corn flakes are evenly coated with butter.
  • Top the Casserole:
Sprinkle the buttery corn flakes evenly over the casserole mixture. This topping will create a crispy, golden layer.
  • Bake:
Place the casserole in the preheated oven and bake for 40–45 minutes, or until the casserole is bubbly and the topping is golden brown.
  • Cool and Serve:
Let the casserole cool for about 5 minutes before serving. Serve warm and enjoy the cheesy, comforting casserole!

Notes

  • You can make this casserole ahead of time and store it in the fridge. Just bake it on the day you plan to serve it.
  • The corn flakes add a delicious crunch, but you can substitute them with crushed potato chips or breadcrumbs for a variation.
  • For a creamier casserole, add more sour cream or cheese to the mixture.
  • You can also top this casserole with other herbs and spices like garlic powder, paprika, or fresh chives for extra flavor.
  • If you prefer a spicier version, add some diced jalapeños or a sprinkle of cayenne pepper.
