Description

Colorful, chewy, and irresistibly fun, these Funfetti Marshmallow Cereal Bars are made with crispy rice cereal, gooey marshmallows, and bright rainbow sprinkles. A perfect no-bake treat for parties, lunchboxes, or anytime snacking.


Ingredients

  • 6 cups crispy rice cereal (gluten-free if needed)
  • 1 (10 oz) bag mini marshmallows (about 4 cups)
  • 3 tbsp unsalted butter or vegan butter
  • ½ tsp vanilla extract
  • ¼ cup rainbow sprinkles (plus extra for topping)

Instructions

  1. Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large saucepan, melt the butter over low heat. Add the mini marshmallows and stir constantly until completely melted and smooth.
  3. Remove from heat and stir in vanilla extract.
  4. Quickly fold in the crispy rice cereal and rainbow sprinkles until evenly combined. Be gentle to avoid crushing the cereal.
  5. Transfer the mixture to the prepared pan and press down gently using a greased spatula or clean hands.
  6. Sprinkle additional rainbow sprinkles on top while still warm.
  7. Let cool completely at room temperature (about 30–60 minutes), then slice into bars and serve.
