Colorful, chewy, and irresistibly fun, these Funfetti Marshmallow Cereal Bars are made with crispy rice cereal, gooey marshmallows, and bright rainbow sprinkles. A perfect no-bake treat for parties, lunchboxes, or anytime snacking.

- 6 cups crispy rice cereal (gluten-free if needed)
- 1 (10 oz) bag mini marshmallows (about 4 cups)
- 3 tbsp unsalted butter or vegan butter
- ½ tsp vanilla extract
- ¼ cup rainbow sprinkles (plus extra for topping)
Instructions
- Grease a 9×13-inch baking dish with butter or non-stick spray.
- In a large saucepan, melt the butter over low heat. Add the mini marshmallows and stir constantly until completely melted and smooth.
- Remove from heat and stir in vanilla extract.
- Quickly fold in the crispy rice cereal and rainbow sprinkles until evenly combined. Be gentle to avoid crushing the cereal.
- Transfer the mixture to the prepared pan and press down gently using a greased spatula or clean hands.
- Sprinkle additional rainbow sprinkles on top while still warm.
- Let cool completely at room temperature (about 30–60 minutes), then slice into bars and serve.
Notes
- To keep bars soft and chewy, avoid overcooking the marshmallow mixture.
- For a vegan version, use vegan marshmallows and plant-based butter.
