- 1 tablespoon olive oil

- 4 cloves garlic, minced
- 1 cup long-grain rice, uncooked
- 2 cups beef broth
- 1 cup whole milk
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it up with a spoon as it cooks. Season with salt and pepper. Cook until browned, about 5-7 minutes.
- Remove excess fat, then add the chopped onion and garlic. Sautรฉ for 2-3 minutes until softened and fragrant.
- Stir in the rice and cook for 1-2 minutes, allowing it to lightly toast and absorb the flavors.
- Pour in the beef broth and milk. Stir to combine and bring the mixture to a simmer. Reduce the heat to low, cover, and let cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, melt the butter in a separate small saucepan over low heat. Add the cheddar cheese and Parmesan cheese, stirring constantly until smooth and melted.
- Once the rice is done, stir in the cheese sauce, making sure itโs evenly distributed throughout the beef and rice mixture. Taste and adjust seasoning with salt and pepper if necessary.
- Garnish with chopped fresh parsley before serving. Serve hot and enjoy!
Notes
- For a spicier kick, add red pepper flakes or a few dashes of hot sauce to the beef while cooking.
- If you prefer a lighter version, you can use ground turkey or chicken instead of beef.
