  • 1 lb boneless, skinless chicken breast, diced
  • 3 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup freshly grated Parmesan cheese
  • Juice of 1 lemon
  • 8 oz linguine pasta

Instructions

  • Cook the linguine according to package instructions until al dente. Drain and set aside.
  • Heat butter and oil: While the pasta cooks, heat 1 tablespoon of butter with the olive oil in a large skillet over medium-high heat.
  • Season and cook chicken: Season the diced chicken with salt and pepper. Add the chicken to the skillet and cook for 5-7 minutes until golden and cooked through, stirring occasionally.
  • Prepare garlic butter sauce: Reduce the heat to medium, add the remaining 2 tablespoons of butter, minced garlic, and red pepper flakes to the skillet. Sauté for 1-2 minutes until the garlic is fragrant.
  • Combine pasta and sauce: Add the cooked linguine to the skillet, followed by the Parmesan cheese, lemon juice, and parsley. Toss to coat, allowing the cheese to melt slightly.
  • Serve warm, garnished with extra Parmesan and parsley if desired.

Notes

Adjust the red pepper flakes for a milder or spicier flavor. Use freshly grated Parmesan for the best taste.
