- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup plain Greek yogurt
- 4–5 fresh plums, pitted and sliced (about 2 cups)
- 2 tbsp brown sugar (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat butter and granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract and Greek yogurt until smooth.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
- Pour batter into the prepared pan and smooth the top. Arrange plum slices in a circular pattern on top, slightly overlapping. Sprinkle brown sugar evenly over the plums.
- Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
Notes
- Use ripe but firm plums for best texture; overripe plums may release too much juice.
- Substitute Greek yogurt with sour cream for similar moisture.
- Store in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days.
