Description

The Garlic Butter Lettuce Tomato & Grilled Chicken Sandwich is a savory, satisfying twist on a classic sandwich. It combines juicy grilled chicken, fresh lettuce and tomato, and golden toasted bread slathered with flavorful garlic butter. Perfect for lunch, picnics, or a quick hearty dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 4 slices thick sandwich bread (sourdough or brioche recommended)
  • 2 tablespoons butter, softened
  • 2 cloves garlic, minced
  • 4 leaves romaine or butter lettuce
  • 1 large tomato, sliced
  • 2 tablespoons mayonnaise (optional)
  • 1 teaspoon Dijon mustard (optional)


Instructions

  1. Preheat grill or grill pan over medium-high heat. Rub chicken breasts with olive oil, salt, pepper, and smoked paprika.
  2. Grill chicken for 6–7 minutes per side or until fully cooked (internal temperature of 165°F). Let rest, then slice thinly.
  3. In a small bowl, mix butter and minced garlic. Spread garlic butter on one side of each bread slice.
  4. In a clean skillet or on a griddle, toast the garlic buttered bread slices until golden and crisp.
  5. Assemble sandwiches: spread mayo and/or mustard (if using) on the non-buttered side of the bread. Layer lettuce, tomato slices, and grilled chicken. Top with the second slice of toasted bread.
  6. Slice in half and serve warm or wrap for lunch on-the-go.
