- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 4 slices thick sandwich bread (sourdough or brioche recommended)
- 2 tablespoons butter, softened
- 2 cloves garlic, minced
- 4 leaves romaine or butter lettuce
- 1 large tomato, sliced
- 2 tablespoons mayonnaise (optional)
- 1 teaspoon Dijon mustard (optional)
Instructions
- Preheat grill or grill pan over medium-high heat. Rub chicken breasts with olive oil, salt, pepper, and smoked paprika.
- Grill chicken for 6–7 minutes per side or until fully cooked (internal temperature of 165°F). Let rest, then slice thinly.
- In a small bowl, mix butter and minced garlic. Spread garlic butter on one side of each bread slice.
- In a clean skillet or on a griddle, toast the garlic buttered bread slices until golden and crisp.
- Assemble sandwiches: spread mayo and/or mustard (if using) on the non-buttered side of the bread. Layer lettuce, tomato slices, and grilled chicken. Top with the second slice of toasted bread.
- Slice in half and serve warm or wrap for lunch on-the-go.
