Description

Garlic Butter Salmon & Asparagus is a simple yet flavorful dish where salmon fillets are baked with fresh asparagus, all drizzled with a rich garlic butter sauce. Perfect for a quick, healthy meal!

4 (6 oz) salmon fillets, skin-on if desired,1 lb (450g) asparagus, trimmed,2 tablespoons extra-virgin olive oil,Kosher salt and freshly ground black pepper, to taste,1/2 cup (1 stick) unsalted butter, melted,4 cloves garlic, finely chopped,2 tablespoons chopped fresh parsley,Zest and juice of 1 lemon,Lemon wedges, for serving


Instructions

Preheat your oven to 400°F (200°C).,On a rimmed baking sheet, toss the asparagus with olive oil, salt, and pepper. Arrange them in a single layer around the perimeter of the sheet, leaving space in the center for the salmon.,Season the salmon fillets with salt and pepper. Place them skin-side down (if applicable) in the center of the baking sheet.,In a small bowl, combine the melted butter, chopped garlic, chopped parsley, lemon zest, and lemon juice.,Drizzle the garlic butter mixture evenly over the salmon fillets.,Place the baking sheet in the preheated oven and roast for 10–12 minutes, or until the salmon is cooked through and flakes easily with a fork.,Garnish with additional chopped parsley and serve with lemon wedges on the side.

Notes

For a crispier texture, broil the salmon for the last 2 minutes of cooking.,Feel free to add other vegetables like baby potatoes or cherry tomatoes to the sheet pan for a complete meal.
