Description

Garlic Butter Salmon with Spinach & Mushrooms in Creamy Sauce features pan-seared salmon fillets in a luscious garlic butter sauce with sautéed spinach and mushrooms, perfect for a wholesome dinner.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Optional: chopped fresh parsley for garnish


Instructions

  1. Season salmon fillets with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add salmon skin-side down and cook 4-5 minutes until crispy. Flip and cook another 3-4 minutes until cooked through. Remove salmon and set aside.
  3. In the same skillet, add butter and minced garlic. Sauté until fragrant, about 1 minute.
  4. Add sliced mushrooms and cook until softened and browned, about 5-6 minutes.
  5. Add fresh spinach and cook until wilted, about 2 minutes.
  6. Pour in heavy cream and Parmesan cheese, stirring to combine. Let simmer for 2-3 minutes until sauce thickens slightly.
  7. Return salmon to the skillet and spoon sauce over the fillets. Drizzle with lemon juice.
  8. Garnish with fresh parsley if desired and serve warm.

  • For a lighter option, substitute heavy cream with half-and-half or coconut milk.
  • Serve with rice, mashed potatoes, or crusty bread to soak up the creamy sauce.
