- 4 salmon fillets (about 6 oz each)
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 4 cups fresh spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 1 tsp lemon juice
- Optional: chopped fresh parsley for garnish
Instructions
- Season salmon fillets with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add salmon skin-side down and cook 4-5 minutes until crispy. Flip and cook another 3-4 minutes until cooked through. Remove salmon and set aside.
- In the same skillet, add butter and minced garlic. Sauté until fragrant, about 1 minute.
- Add sliced mushrooms and cook until softened and browned, about 5-6 minutes.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Pour in heavy cream and Parmesan cheese, stirring to combine. Let simmer for 2-3 minutes until sauce thickens slightly.
- Return salmon to the skillet and spoon sauce over the fillets. Drizzle with lemon juice.
- Garnish with fresh parsley if desired and serve warm.
Notes
- For a lighter option, substitute heavy cream with half-and-half or coconut milk.
- Serve with rice, mashed potatoes, or crusty bread to soak up the creamy sauce.
