Description

Ingredients

  • 4 salmon fillets

  • 2 tbsp olive oil

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • 1 cup mushrooms, sliced

  • 3 cups fresh spinach

  • ½ cup heavy cream

  • ¼ cup grated Parmesan cheese

  • 1 tsp lemon juice

  • Salt and pepper to taste

  • Fresh parsley (optional, for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper and cook them for 4-5 minutes on each side, or until golden brown and cooked through. Remove salmon from the skillet and set aside.

  2. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

  3. Add the sliced mushrooms and cook for 3-4 minutes, or until softened.

  4. Stir in spinach and cook until wilted, about 2-3 minutes.

  5. Pour in the heavy cream, Parmesan cheese, and lemon juice, stirring to combine. Let the sauce simmer for 2-3 minutes until it thickens slightly.

  6. Return the salmon fillets to the skillet, spooning the creamy sauce over the top.

  7. Cook for an additional 2-3 minutes, until the salmon is heated through and coated with the sauce.

  8. Garnish with fresh parsley if desired, and serve immediately.

Notes

  • You can substitute the heavy cream with coconut cream for a dairy-free option.

  • Serve with rice or mashed potatoes for a more filling meal, or enjoy it on its own for a low-carb option.
