For the Garlic Butter Steak Bites:

  • 1 ½ lbs sirloin or ribeye steak, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced

  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional)

For the Mashed Potatoes:

  • 2 lbs Yukon Gold potatoes, peeled and cut into chunks
  • ½ cup heavy cream (or milk)
  • 4 tablespoons unsalted butter
  • Salt and pepper, to taste
  • ¼ cup sour cream (optional for creaminess)
  • Fresh chives, chopped (for garnish)

Instructions

  • Prepare the Mashed Potatoes:
    • In a large pot, bring salted water to a boil. Add the peeled and chopped potatoes, cooking until tender (about 15-20 minutes).
    • Drain the potatoes and return them to the pot. Add heavy cream, butter, and sour cream (if using). Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.
  • Cook the Steak Bites:
    • While the potatoes are cooking, season the steak bites with salt, pepper, and garlic powder (if using).
    • In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once melted, add the steak bites in a single layer. Cook for 2-3 minutes per side, depending on the desired doneness (medium-rare is about 130°F/54°C). Avoid overcrowding the pan; you may need to cook in batches.
    • Remove the steak bites from the skillet and set them aside.
  • Make the Garlic Butter:
    • In the same skillet, lower the heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the minced garlic, stirring for about 1 minute until fragrant.
    • Return the steak bites to the skillet, tossing to coat them in the garlic butter. Cook for an additional 1-2 minutes to heat through.
  • Serve:
    • Spoon the creamy mashed potatoes onto plates and top with the garlic butter steak bites. Drizzle any remaining garlic butter from the skillet over the steak bites.
    • Garnish with chopped parsley and fresh chives for added flavor and color.

Notes

Feel free to adjust the seasoning to your taste. Adding more garlic powder can enhance the flavor if you love garlic.
