  • 1 lb sirloin steak, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • For the Smoky Chipotle Cream Cheese Pasta:
  • 8 oz pasta (penne, fettuccine, or your choice)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 (8 oz) package cream cheese, softened
  • 12 tablespoons chipotle in adobo sauce, chopped (adjust to your heat preference)
  • 1/2 cup milk (or heavy cream for extra richness)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. For the Garlic Butter Steak Bites: In a large skillet, heat olive oil over medium-high heat. Season the steak cubes with salt and pepper, then cook in the hot pan until browned on all sides, about 5-7 minutes. Remove steak from the pan and set aside.
  2. In the same pan, melt butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Return the steak bites to the pan, toss in the garlic butter sauce, and cook for another 1-2 minutes until the steak is cooked through. Remove from heat and set aside.
  3. For the Smoky Chipotle Cream Cheese Pasta: Cook the pasta according to package directions. Drain and set aside.
  4. In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  5. Add the cream cheese and chipotle in adobo sauce, and stir until the cream cheese melts and combines with the garlic.
  6. Slowly add milk (or cream) while stirring until smooth and creamy. Add Parmesan cheese and stir until the sauce is thickened. Season with salt and pepper to taste.
  7. Add the cooked pasta to the sauce and toss until well coated. If the sauce is too thick, add a little more milk to reach your desired consistency.
  8. To serve, divide the pasta into bowls and top with the garlic butter steak bites. Garnish with fresh cilantro if desired.

Notes

  • For an extra kick, add more chipotle in adobo or a dash of smoked paprika to the sauce.
  • Feel free to swap out the sirloin steak for another tender cut like ribeye or filet mignon.
  • If you prefer a spicier sauce, leave some of the adobo sauce from the chipotle can in the mixture.
  • For a lighter version, swap the cream cheese for Greek yogurt and use half-and-half instead of heavy cream.
