Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts to the pan and cook for 6-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set it aside on a plate.
  3. Make the garlic sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Cook for about 1 minute, stirring constantly, until the garlic becomes fragrant. If you like a little spice, add the crushed red pepper flakes at this stage.
  4. Add liquid: Pour in the chicken broth and lemon juice, scraping the bottom of the pan to release any browned bits. Let the sauce simmer for about 2-3 minutes, allowing it to reduce slightly.
  5. Finish the sauce: Stir in the chopped parsley and optional butter, allowing it to melt into the sauce. Taste the sauce and adjust the seasoning with more salt or pepper if needed.
  6. Serve: Return the chicken breasts to the skillet, spooning some of the garlic sauce over the top. Allow the chicken to soak up the flavor for another 2-3 minutes. Serve the chicken with extra sauce drizzled over the top.

  • If you prefer a thicker sauce, you can whisk in a teaspoon of cornstarch mixed with water.
