- 3 tbsp unsalted butter, melted

- 1 tsp fine sea salt
- Freshly ground black pepper, to taste
- Fresh thyme and rosemary sprigs, for garnish
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C). Spray a 12-cup muffin pan with cooking spray.
- Slice Potatoes: Using a mandoline or sharp knife, thinly slice the potatoes to about 1/16-inch thickness.
- Prepare Herb Butter Mixture: In a large bowl, combine melted butter, olive oil, minced garlic, chopped thyme, rosemary, salt, and pepper.
- Coat Potatoes: Add the potato slices to the bowl and toss until they are evenly coated with the herb butter mixture.
- Layer in Muffin Pan: Layer the coated potato slices in each muffin cup, stacking them to the top. Drizzle any remaining butter and oil mixture over the tops.
- Bake: Bake for 45-50 minutes or until the tops are golden brown and the centers are tender. Rotate the pan halfway through to ensure even cooking.
- Serve: Allow the galettes to cool in the pan for 5 minutes before carefully removing them. Garnish with fresh thyme and rosemary sprigs.
