Description

These crispy, golden, and herb-infused potato galettes are baked to perfection in a muffin pan, making for an elegant and delicious side dish that complements any meal.


Ingredients

  • 4 large Russet potatoes (about 2 lbs), peeled
  • 3 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp fine sea salt
  • Freshly ground black pepper, to taste
  • Fresh thyme and rosemary sprigs, for garnish

Instructions

  • Preheat Oven: Preheat oven to 375°F (190°C). Spray a 12-cup muffin pan with cooking spray.
  • Slice Potatoes: Using a mandoline or sharp knife, thinly slice the potatoes to about 1/16-inch thickness.
  • Prepare Herb Butter Mixture: In a large bowl, combine melted butter, olive oil, minced garlic, chopped thyme, rosemary, salt, and pepper.
  • Coat Potatoes: Add the potato slices to the bowl and toss until they are evenly coated with the herb butter mixture.
  • Layer in Muffin Pan: Layer the coated potato slices in each muffin cup, stacking them to the top. Drizzle any remaining butter and oil mixture over the tops.
  • Bake: Bake for 45-50 minutes or until the tops are golden brown and the centers are tender. Rotate the pan halfway through to ensure even cooking.
  • Serve: Allow the galettes to cool in the pan for 5 minutes before carefully removing them. Garnish with fresh thyme and rosemary sprigs.
