Description

This deliciously simple side dish features sautéed zucchini and mushrooms tossed in a garlic herb butter. It’s a perfect accompaniment to any meal, full of earthy, savory flavors and a light, healthy touch!


Ingredients

Scale
  • 2 medium zucchinis, sliced thinly
  • 1 1/2 cups mushrooms, sliced
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme
  • Salt & pepper, to taste
  • Fresh parsley for garnish

Instructions

  • In a large skillet, heat the olive oil or butter over medium heat.
  • Add the sliced zucchini and mushrooms to the skillet. Cook for 5–7 minutes, stirring occasionally until the vegetables start to soften.
  • Stir in the minced garlic and thyme, cooking for another 2–3 minutes until the garlic is fragrant and the vegetables are tender.
  • Season with salt and pepper to taste. Garnish with fresh parsley and serve immediately!

Notes

  • This dish can be easily modified with additional vegetables or herbs based on preference.
  • Leftovers can be stored in an airtight container in the refrigerator.
