Description
This deliciously simple side dish features sautéed zucchini and mushrooms tossed in a garlic herb butter. It’s a perfect accompaniment to any meal, full of earthy, savory flavors and a light, healthy touch!

- 2 medium zucchinis, sliced thinly
- 1 1/2 cups mushrooms, sliced
- 2 tbsp olive oil or butter
- 3 cloves garlic, minced
- 1 tsp fresh thyme
- Salt & pepper, to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil or butter over medium heat.
- Add the sliced zucchini and mushrooms to the skillet. Cook for 5–7 minutes, stirring occasionally until the vegetables start to soften.
- Stir in the minced garlic and thyme, cooking for another 2–3 minutes until the garlic is fragrant and the vegetables are tender.
- Season with salt and pepper to taste. Garnish with fresh parsley and serve immediately!
Notes
- This dish can be easily modified with additional vegetables or herbs based on preference.
