Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, chopped into 1-inch pieces
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven: Preheat the oven to 400°F (200°C). Lightly grease a large baking sheet or dish with cooking spray or olive oil.
  • Make the garlic Parmesan mixture: In a small bowl, mix together olive oil, minced garlic, Parmesan cheese, oregano, thyme, paprika, salt, and pepper.
  • Season chicken and potatoes: Rub half of the garlic Parmesan mixture over the chicken breasts, coating both sides. Toss the chopped potatoes with the remaining garlic Parmesan mixture until evenly coated.
  • Arrange on baking sheet: Arrange the chicken and potatoes on the prepared baking sheet in a single layer.
  • Bake: Bake for 25-30 minutes, or until the chicken is fully cooked and the potatoes are tender and crispy around the edges.

Notes

For extra flavor, let the chicken marinate in the garlic Parmesan mixture for 30 minutes before baking.
