For the Garlic Parmesan Topping:

Instructions

  • Preheat your oven to 375Β°F (190Β°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  • In a large mixing bowl, combine ground chicken, breadcrumbs, grated Parmesan, shredded mozzarella, beaten egg, garlic, onion, Italian seasoning, salt, pepper, and fresh parsley. Mix until just combined, being careful not to overmix to keep it tender.
  • Transfer the mixture to a loaf pan or form it into a loaf shape on a baking sheet. Press it down lightly to ensure even cooking.
  • In a small bowl, combine the Parmesan cheese, breadcrumbs, melted butter, and minced garlic for the topping. Mix until well incorporated, then spread this topping evenly over the meatloaf.
  • Bake for 35-40 minutes, or until the internal temperature reaches 165Β°F (74Β°C) and the top is golden and crispy.
  • Let the meatloaf rest for 5 minutes before slicing. Garnish with fresh parsley and serve.

Notes

  • Make sure to not overmix the meat mixture to avoid a dense meatloaf.
