Description

Garlic Parmesan Potatoes are the ultimate side dish that combines the rich flavors of garlic and Parmesan cheese with crispy, tender potatoes. Roasted to perfection, these potatoes are golden brown on the outside, soft and fluffy on the inside, and packed with irresistible flavor. Whether as a side for dinner or a snack on their own, they’ll become your new go-to favorite!

Ingredients

Scale
  • 2 lbs baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the potatoes: In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until the potatoes are evenly coated.
  3. Roast the potatoes: Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through to ensure even cooking.
  4. Add Parmesan: Once the potatoes are roasted, remove them from the oven and sprinkle with grated Parmesan cheese. Toss gently to coat the potatoes with the cheese.
  5. Garnish and serve: Garnish the roasted potatoes with freshly chopped parsley and serve immediately. Enjoy your crispy, garlicky, cheesy potatoes!

Notes

  • If you want extra crispy potatoes, broil them for the last 2-3 minutes of cooking.
  • Feel free to swap the dried herbs for fresh rosemary or thyme for a more vibrant flavor.
  • You can also add a squeeze of fresh lemon juice over the roasted potatoes for a bright finish.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven to maintain their crispiness.
