Description

Garlic Stuffed Jacket Potatoes are a comforting and flavorful dish featuring crispy-skinned potatoes filled with a creamy garlic-infused mashed potato filling. Perfect as a side dish or even as a main, these stuffed potatoes are loaded with flavor and can be topped with cheese, herbs, or even bacon bits for extra indulgence.

  • 4 large russet potatoes
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup butter
  • 1/2 cup sour cream
  • 1/4 cup milk (or more for desired consistency)
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup green onions, chopped (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the potatoes clean and prick each potato a few times with a fork. Rub the potatoes with olive oil and season with salt. Place them on a baking sheet and bake for 45-60 minutes or until the potatoes are tender when pierced with a fork.
  2. While the potatoes are baking, heat the butter in a skillet over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it. Remove from heat and set aside.
  3. Once the potatoes are cooked and cool enough to handle, cut a slit down the center of each potato. Gently scoop out the flesh, leaving a border of potato to maintain the skin’s integrity. Place the scooped-out potato flesh into a large bowl.
  4. Add the garlic butter, sour cream, milk, salt, and black pepper to the bowl with the mashed potato flesh. Mash everything together until smooth and creamy. Adjust the seasoning to taste.
  5. Stuff the mashed garlic potato mixture back into the potato skins, dividing the filling evenly among the potatoes.
  6. If using, top each stuffed potato with shredded cheddar cheese and return them to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and garnish with chopped green onions. Serve hot and enjoy!

  • Feel free to top the stuffed potatoes with crispy bacon bits, extra cheese, or fresh herbs like parsley or thyme for added flavor.
